Cupping Notes: Chocolate, Nutty, Orange, with a hint of Spice.
This coffee is cultivated in the “Angelina” region between Matagalpa and Jinotega, and we roast it well into the second crack, and dump it when the color of the bean is consistently dark brown, with small specks of oil visible on the bean.
If there is one of our coffees that we would call our “Flagship”, it is this coffee that consistently supplies deep complex flavors with a pleasant body that slides off the palate.
Photo: The morning "commute" for many in the Lower Coco River is in their dugout canoes crossing the river to neighboring Honduras, where they have their rice and bean fields. They keep their animals on the Nicaraguan side, so the cows, pigs, and horses will not eat the crop! Field work starts at sunup, the coolest part of the day. Here two are returning from a morning working their fields in Honduras.
