Cupping Notes: Orange, Cherry, Chocolate, & Caramel. This delicious high altitude Colombia coffee is roasted slowly to the just past the first crack. This extra light roast is bright, with naturally sweet notes. Roasting time: 13-14 minutes, dropped at 407 degrees. We call this our "Colombia First Crack Coffee" Photo: Rice, beans, and bananas are the staple crops grown in each Miskito community along the Coco River. To prepare harvested rice for cooking, you must first knock off the hull from the seed. This activity is called “rice kupia” and done usually each morning for the daily meals. It is a energetic activity using a wooden pole that is thicker on each end. It is a workout usually done by children. This lady is our neighbor in Sawa. The chickens and pig gather to eat any rice that spills out.
