Fresh Mozzarella (hand made by Chef Lippe) Florida. Two ¼ pound or 1 ½ pound Mozzarella balls in whey and water. Freshly made with pasteurized milk from Florida dairies. There is something magical about making Mozzarella, like making bread, squeezing round balls from the warm and gooey curd, smelling of freshly milked juices and whey is what makes me happy to do what I do. I try to make them as close to the size of a tomato as I can, so you can slice both and adding a little basil to have a perfect Caprese.

Chef Lippe

Chef Lippe is a cheese affineur, a charcutier, former restaurateur pastaiolo. He has been aging cheese to perfection and purveying to clients since 2010. Chef Lippe chose Vero Beach as his home in 2016 seeking a less frenetic pace than South Florida. He crafts handmade fresh mozzarella with milk from Florida farms, cheese spreads, antipasto and his partner Rain hand stuffs large Spanish Queen olives with Italian blue cheese.
