I take perfectly dried smoky Pasilla chiles, hydrate them, puree them and combine them with a blend of Mexican cheeses. Cotija, Fresco and Oxaca are usually in the mix, but Queso Blanco and other Mexican delicacies have been known to find their way to this spread. Pasilla Chile is the most flavorful and least spicy of all dried chiles out there. You can safely use it at gatherings, without fear of overpowering those who do not like the heat found in other chiles like jalapeƱo. Chef Lippe

Chef Lippe is a cheese affineur, a charcutier, former restaurateur pastaiolo. He has been aging cheese to perfection and purveying to clients since 2010. Chef Lippe chose Vero Beach as his home in 2016 seeking a less frenetic pace than South Florida. He crafts handmade fresh mozzarella with milk from Florida farms, cheese spreads, antipasto and his partner Rain hand stuffs large Spanish Queen olives with Italian blue cheese.
