6oz Hand Made. Garum Moretum is probably the first cheese spread known to Western civilization. First the Greeks, and then the Romans helped spread (no pun intended) this cheese spread around the classical world from the time of Athens, during the whole Roman Empire and into Byzantine times, Moretum consists of fresh cheese, a little vinegar and spices and herbs. There are accounts of very simple Moretum, probably enjoyed by peasants and elaborate mixtures that included olives and capers enjoyed by the upper class. Chef Lippe’s Moretum can accommodate both versions as it is handmade by order. The moment you buy it online, is the moment it is made.

Chef Lippe

Chef Lippe is a cheese affineur, a charcutier, former restaurateur pastaiolo. He has been aging cheese to perfection and purveying to clients since 2010. Chef Lippe chose Vero Beach as his home in 2016 seeking a less frenetic pace than South Florida. He crafts handmade fresh mozzarella with milk from Florida farms, cheese spreads, antipasto and his partner Rain hand stuffs large Spanish Queen olives with Italian blue cheese.
