Chef Lippe's Pâté de Campagne - Country Pâté
Chef Lippe starts with pork shoulder, minced finely with Cointreau, thyme, sage and tarragon, garlic, and freshly cracked black pepper are added along with other goodies like pistachios, olives, and dried cranberries (fillings vary) before being wrapped in bacon and slowly cooked for five hours. Serves 5 guests. Made to order. Never frozen.
