Boquerones are fresh white anchovy fillets.These delicious anchovies are caught off the coast of Morocco. After being caught and filleted by hand, they are soaked in lemon juice and vinegar for approximately 14 hours. They are then delicately marinated in sunflower oil, chilies, and garlic. Boquerones are typical of Andalucia and the most common item found on the counters of tapas bars throughout Spain.
