Prima Donna is aged – like fine wine – until it reaches the pinnacle of flavor. For this reason, Prima Donna cheese does not age for a set amount of time, but rather until it acquires a particular flavor profile. Throughout the aging period, there are different varieties we have identified as the pinnacle flavor stages: fino, maturo and forte, each one offering a unique Italian taste sensation. “Little white crunchy dots” occur in Prima Donna cheese throughout the aging process. They occur especially in the extra aged varieties maturo and forte. These little white dots are called “crystals”. Fine white crystals tend to collect especially in the holes of the cheese. That is why, when you slice Prima Donna, there can be visible white strips over that section of the cheese. Collecting multiple awards worldwide from 2008 to 2017 and counting this is a gem not to be ignored. Serve Prima Donna with red wines such as Cabernet Sauvignon, Pinot Noir, Syrah, or Zinfandel.

Chef Lippe

Chef Lippe is a cheese affineur, a charcutier, former restaurateur pastaiolo. He has been aging cheese to perfection and purveying to clients since 2010. Chef Lippe chose Vero Beach as his home in 2016 seeking a less frenetic pace than South Florida. He crafts handmade fresh mozzarella with milk from Florida farms, cheese spreads, antipasto and his partner Rain hand stuffs large Spanish Queen olives with Italian blue cheese.
