Chimichurri is an uncooked sauce made with finely chopped herbs, garlic, oil, vinegar and red pepper flakes. The sauce originates from Argentina and Uruguay, where it is traditionally used to dress grilled meats. In Buenos Aires it is used on top of the ubiquitous “choripan” a hot dog of sorts using grilled sausage, popular lunch fare among taxi drivers who form long lines at street stalls during mid-day hours, and in Uruguay, to top “chivito” a traditional sandwich with a thin piece of tender steak, a sunny side egg, tomato, and lettuce. Use it to top your burgers, roasts, steaks, tacos, or just about anything that needs a bright tangy flavor added.

Chef Lippe

Chef Lippe is a cheese affineur, a charcutier, former restaurateur pastaiolo. He has been aging cheese to perfection and purveying to clients since 2010. Chef Lippe chose Vero Beach as his home in 2016 seeking a less frenetic pace than South Florida. He crafts handmade fresh mozzarella with milk from Florida farms, cheese spreads, antipasto and his partner Rain hand stuffs large Spanish Queen olives with Italian blue cheese.
